sweet adventures in the kitchen- pineapple upside cake
Today I share with you an American classic; the pineapple upside down cake!!
This cake is in honor of my wonderful sister Alison who, as I have mentioned previously and as you all know is in Africa for the Peace Corps.On her birthday she took a trip to the nearest city from her village to have a bit of comfort.. well, by comfort I mean a flushing toilet, a bed to sleep on, and a simple kitchen to cook her birthday cake in. Now as you can imagine, there are very few things that one can hold onto for pleasure, and one thing she held onto this weekend for her momentous 25th birthday was a simple cup of coffee and good ole pineapple upside down cake.... but remember this is Africa.. Unfortunately the equipment to make the coffee was missing some important pieces and the new sack of flour she bought to make her birthday cake with had beetles in it.. Now usually if your in Africa one would just sift them out, but I was told there were many families of beetles in this sack of flour... So in the end, no coffee, no cake... just Africa and a year older... So Alison, in honor of you, Here is your pineapple upside down cake..
the wonderful flavored canned ingredients- sliced pineapples, candy cherries, 1/3 cup oil, 1/2 cup pineapple juice, and a yellow cake mix- that's it!
mix up all the ingredients!! whip- whip- stir- stir- blend- blend!
-spread the batter in the pan and place the slice pineapples and candy cherries on top of the batter
sprinkle the brown sugar all over the top and bake at 350!
bake for 40mins and place more candy cherries on top and sprinkle a bit more brown sugar on top and enjoy with a nice cup of coffee..
